    When does perseverance become motivation? When you think you have hit the bottom and need to find a way to get back up what do you reach for? Is it possible to hit an obstacle that can't be breached? Is there always a way to succeed?     How do you define success then? I define success by simply knowing that the only person who can tell me how and what I need to be is me. Only I can decide what my goals are and how or what method I am going to use to reach them. I never use to look at things as an obstacle that could simply be beaten. I used them as excuses and a reason for what I had become and for why I was "that way." I allowed others to have more input on my life than I did on what my goals should be and how I should live. It took some pain and suffering to come to the conclusion that if I want it, I need to set my eyes on it and do my best to grasp it. Disclaimer: I wing most of my recipes and come up with some off the wall items so don't blame me if you don't like it, just move on people!      I suffered through a grueling week of eating great every two hours and passing on soda, junk food, and everything in between...I even passed on Gourmet cupcakes at an office party....what a shame!    But hopefully it is all worth it for these lovely pancakes I will indulge in tomorrow morning. Here is goes: 2 cups all purpose WHOLE WHEAT UNBLEACHED flour 2 tbsp brown sugar 1 tbsp baking powder 1 teaspoon salt 1-1 1/2 cups quick oats 1/2 tbsp cinnamon 1 tsp pumpkin spice 2 cups milk 2 large eggs 1/4 cup canola oil 1/2 stick butter 8oz whipped cream cheese 1/2 tsp vanilla 1/2 tbsp honey Semi melt the butter(do not add spices first) in the microwave till you can mix all the spices and honey with it.      I walked into my work break room today saw some amateur on TV trying to make roasted mushrooms....Yeah, well mine are better. Ingredients: 1 pack of whole mushrooms 1 8oz cream cheese(whipped) 1/2 tsp of garlic 1/2 tsp of Italian seasoning and sun dried tomato 2 slices of bacon cooked and chopped 8 oz of Parmesan cheese 2 eggs blended 1 box of Panko breadcrumbs 1/2 cup of olive oil     Simple: get a pack of whole mushroom, rinse and rip the stems off. Next get a tub of whipped cream cheese, mix the whipped cream cheese with a table teaspoon of garlic, salt, pepper, and some sun dried tomato seasoning or Italian seasoning or try some roasted red pepper seasoning. Mix in some real Parmesan(not the canned stuff!) and the chopped bacon. Stuff the inside of the mushroom with the cream cheese mix.      I once had a marriage philosophy that went like this...."I bring home the bacon, she cooks it, and then cleans up afterwards, chop! chop!"      Are you an addict? can you put down the remote during your favorite TV show to do something different?      About a year ago I made some pretty major changes in my life that I will cover in a series coming up in November explaining it in detail(so stay tuned!!!!).      As time goes by I find myself trying to work up a routine more and more. I have managed to create a workout routine and i'm still working out the kinks of a diet plan. I tried oatmeal today and mixed in vanilla protein powder, and I highly suggest you NEVER do that! unless you enjoy the taste of crap in a nifty bowl, go for it. I did however eat an amazing healthy taco last night. Now there is no measurable scientific proof that says organic foods are more nutritious for you than regular foods. But when I can afford it I do my best to eat better quality foods more often.
